This weekend I am camping out in Castle Hill....literally. My cousins daughters have constructed a bed in the middle of their lounge room and this is where we will sleep until Monday. A weekend in Castle Hill means a trip to Castle Towers for supplies i.e. lollies, ice cream and ingredients for cup cakes as we planned to bake!
The recipe was simple:
CUPCAKES
250g unsalted butter
2 cups sugar
4 eggs
1 ½ cups self-raising flour
1 ¼ cups plain flour
1 cup milk
1 teaspoon vanilla extract
ICING
4 cups icing sugar
125g unsalted butter
¼ cup milk
We arrived home and sorted out our supplies before switching on the oven. The recipe called for an electric mixer, however we couldn't find all the parts so had to resort to some good 'ol elbow grease. This was a lot easier than we thought and our mixture was smooth with no lumps before we knew it.
We made 12 cupcakes and they only required 15 mins in the oven before cooling on the rack. After all this hard work we had to cool off too........in the pool before deciding how to ice the cupcakes. Zoe did a fantastic job icing the cupcakes and decorating them with the sugary designs - what fun!
